Speaking as a food/beverage professional, I highly recommend this product to anyone, for a few reasons;1) The pebble surface makes it practically non-stick, without the downfalls of teflon.2) The light color means you wont burn or overcook your product as easily (Especially the surface. You've all had the bottom of a cake brown a little too much during the cooking process; this is 9 times out of ten due to a dark contact surface that attracts more heat, just like a black shirt in the Carolina summer.3) Since it's all aluminum, it cooks perfectly evenly, its a heavy gauge while remaining lightweight, and it costs a literal fraction of what copper, the only better widely used cookware material, will cost you.Their are some people that may worry about the safety of cooking with an unlined aluminum surface. First and foremost, never dine in a restaurant again. In almost every professional kitchen I've ever worked in, all of the pots and pans are unlined aluminum. Secondly, just dont cook anything acidic in direct contact with it, like roasting tomatoes. The entire doughmaker product line are priceless assets to the serious baker.

Since purchasing these pans, I have made the best cakes ever. With the very first cake, I was told by not one, not two, but three people that it was the best cake they ever tasted. It cooks your cake very evenly. The cake comes out perfect. It was also very very moist. Still another person told me that they had never had a cake that moist. The flavor does not even resemble that of regular cake pans. The pans are great quality. Clean up is a snap. Well worth the money!!

I bought this from reading the highly rated reviews and thought that it would be nice to1) not use so much non-stick pans because of the chemicals that are on it.2) buy something Made in the USA.Unfortunately, these pans are now made in CHINA, because a another company bought out Doughmakers.Nevertheless, the pans seems pretty sturdy. I've only baked once in them (carrot cake) and with parchment paper lining the bottom, and some butter, the cake came out easily and cooked well. I look forward to seeing whether these pans are worth the price tag, and if they are as durable as the reviewers claim.
