Item Description

Looking nothing like traditional bakeware but borrowing many of its best characteristics, Lekue's mini madeleine pan cooks evenly, releases food easily, and is made of FDA approved food grade silicone. It takes some getting used to, but the pliable silicone construction carries many advantages such as immediate cool-down, the prevention of burnt edges and crusts, and a foldability that extends storage options. With a slightly shorter cooking time, the pan bakes twenty 1-1/4-by-1-3/4-inch tasty treats--complete with the traditional madeleine shape and ridged texture. Nonstick surfaces help food to release easily but greasing is still a good idea--especially if regularly being washed in the dishwasher. Freezer-, microwave-, and oven-safe up to 500 degrees F, the pan seamlessly transitions from cold to hot. Contact with direct heat sources such as burners or hotplates should be avoided and sharp metal tools can damage or cut the material. The pan measures 7 by 1/2 by 12 inches and benefits from a quick rinse before use as small crumbs and particles easily adhere to its rubbery surface. -- Amy Arnold

So easy to clean
bodeezy

The mini madeleine pan is so easy to clean, and the cookies never stick! the only drawback to the pan is that you have to fill each individual mold one by one...very time consuming. If you place the silicone pan on a regular cookie sheet, the bellies of the madeleines will be slightly browned, making for less attractive cookies. Make sure to leave a little room in each mold (don't fill it up to the brim) to allow for expansion of the batter.

Quick tip to prevent uneven browning

Both the previous reviewers mentioned the uneven browning which results when baking madeleines in this pan on a metal cookie sheet. One thing I've done is invert another piece of silicone bakeware (a mini muffin pan works well) on the cookie sheet, then place the madeleine pan on top of that (if available, a silpat sheet in between gives an extra layer of stability). Easy to get in and out of the oven, and no direct contact with the metal sheet!

Easy to remove even without any butter!

I bought this in 08/2008 for $12.99 through amazon and love this silicon mold. I made madeleine for the first time and it came out great. I didn't butter or coat the mold with anything to prevent it from sticking and it came out so easily that it slides out by itself. A few that are stuck in the mold just needs a push from the outside of the mold and it comes right out. I baked the madeleines with a williams-sonoma baking sheet under it and the only complaint is that the bottom of the cookie in the middle has a small little round area that is more golden brown than the rest. It's not a big deal for me because I'm not serving it to food critics and I'm too lazy to hold the silicon awkwardly in the oven without the baking sheet. You must fill the mold 3/4 full if you don't want it to over flow. The madeleine size is about a half U.S. dollar coin.
