I recently replaced old pans with the Parrish Magic Line--8 and 9 inch cheesecake pans, regular 8 and 9 inch layer and the removable bottom angel food pan. All the pans have performed wonderfully. They are thick, sturdy, and clean up easily. Cheesecake was a breeze to remove from these pans. I also discovered another use for them--deep dish pizza. It was so easy to get the pizza out of the pan.

Pros: strong, sturdy, heavy duty, bakes evenly, made in USACons: NoneI love these pans and I'm a very detailed person! Purchased the 6", 8" and 10" from directly from the company based on reference from a baking book that was published from the 80's! Aluminum pan bakes evenly without the tough thick crust you find in most retail pans (dark steel or aluminized steel). The edges are completely smooth (no seams). The bottom opening and removable bottom are also smooth, no sharp edges. I have used them for cheesecakes, flourless cakes, and even butter cakes. All turn out great. I also use the removable bottom discs for cake decoration and transporting. This company has been around for four generations and still makes their pans in the U.S.A.

These pans are great for baking cheesecakes. I have a collection of these, many of which were leftover from making my own wedding cheesecake. I once did a side-by-side comparison, baking one cheesecake in a Magic Line pan and one in a springform pan. The cheesecake baked in a springform pan browned more on the sides and was harder to remove from the pan. The cheesecake baked in a Magic Line pan was prettier and appeared to have baked more evenly (also easier to remove from the pan, just place on a large can and gently pull the pan sides down). So I disposed of my springform pans and came to Amazon to buy more sizes of Magic Line cheesecake pans.These cheesecake pans do not leak batter out, although it is not safe to bake in a waterbath without wrapping the pan with two layers of foil. I have had water seep in and make my crust soggy when I only used one layer of foil and baked in a water bath. I have successfully baked regular cakes in these pans as well.
