Great concept and great in practice. Makes baking a really deep cheesecake pretty simple and straightforward. The only issue we've had is that the non-stick coating was not really well adhered to the metal of the pan and has peeled in a few places due to someone using the classical 'knife around the edge' method of releasing the cake from the pan. If you can resist that temptation this is a high quality and very effective baking tool.

I purchased this product because I wanted a high quality springform pan. The pan had to have a 3 inch deep collar! This was not an easy task. I originally used this pan to bake a New York Cheesecake in dry heat rather than a water bath as this was what the recipe required. The issue is that the ceramic dish cannot tolerated temperatures of 500 degress without cracking. Despite the fact that the cake was baked at that temperature for only 10 minutes as required by the recipe, my dish developed a small crack.The next time I used my new pan I placed it in a water bath, and wrapped it two layers of heavy aluminum foil. The cheesecake turned out beautifully with no cracks. However, their was a lot of water that had condensed from the water bath on to the lip of the ceramic dish. This was depite the two layers of foil. If you bake to sell, the ceraminc dish becomes an issue. I lined the bottom of the pan with parchment paper and greased it, but was fearful of having my expensive cheesecake stick to the ceraminc dish.I also want buyers to know that I would have saved over ten dollars had I purchased this same pan at Everthing Kitchens for $51.99 rather than purchasing it at Amazon who went through Wine Stuff to obtain the pan.
