I got this pan to make a Christmas Cake: I wanted to do a Buche de Noel but that was beyond my available time and technical abilities. This pan was GREAT; it heated evenly, cleaned off like a dream, and released the cake with no issues. I used a recipe that was intended to make 3, 9 inch layers (a rightly-famous red wine chocolate cake); this pan required 2/3 of the batter and yielded a slightly poofy top that I trimmed to level the cake. You would probably be safe making one full cake recipe, intended to make two 9 inch layers, to fill the pan. The one challenge that I encountered was that it took MUCH longer to bake than the directions for the layer cake, approximately twice as long. I thought this might be because it was more similar to a loaf than a layer pan, but I found a similar loaf recipe and this took much longer than the loaf as well. So: be prepared to guestimate on the cooking time, and check regularly until it is done.

This is a very well made cake pan. High grade materials that will last a long time as with all Nordic ware bake ware. Does not stick, doesn't dent, cakes pop out perfect every time. Its a bit more of an investment price wise but it will be one of the few that you will hand down to your kids.

Admittedly, I am not much of a cake chef! but I found this Nordic Ware Yule Log pan to be a lot of fun! My family was impressed with the results and wanted to know where I purchased the cake! I was a lot of fun!
